Long time, no post! I know, I know. I apologize for the lack of posting lately. I am trying to simply stay above water here. Between finishing up my previous job, editing portrait sessions and weddings, and the holiday smack dab in the middle of everything, blogging has not been my top priority. Last Tuesday was my last day working for Lynchburg College! Wednesday was my first day as a full time business owner and I spent the morning at a newborn session and the afternoon / evening cleaning and baking for the holiday the next day. Thursday we had an awesome meal with Tommy’s family and proceeded to drive 6 hours to the beach that evening to spend the weekend there. We drove home on Monday. It was a wonderful little vacation and the perfect kick-off to being my own boss.
So… here we are… another Tuesday upon us! I know this is a late Gratituesday post, but better late than never!
This week I am especially grateful for a healthy body. I am thankful that I have functioning arms and legs, five working senses, and a strong immune system. As I typed that last phrase it occurred to me that I have actually been sick for almost a week now with a crappy head cold. Obviously it is not so crappy today that it distracted me from being thankful for a healthy body! So despite once-every-three-years-colds that pop up, I am so appreciative of my body and how strong and healthy it is.
Before we left for the beach I bought myself a super nice juicer. I packed it up and took it with me to the beach so my sister and I could play with it all weekend. I played with lots of different juice recipes and have had such a fun time with it. I am so excited about drinking all of the vitamins and minerals straight from freshly juiced fruits and vegetables! After slurping up a bout of fresh green lemonade, my mind is clear and I feel to ready to take on the world! Okay, maybe not so much take on the world… but the last thing I feel like doing is sleeping, and THAT in an of itself is amazing. And totally worth it!
Here’s my current favorite recipe. I hope you’ll give it a try!
P.S. Check out all those apples - every one of them is getting consumed by me this week! I am so excited!
Green Lemonade
1/2 head of romaine lettuce
3 stalks of kale
1/2 a lemon w/ peel
1-2 apples (to taste)
fresh ginger root (to taste)
Toss it all in the juicer, pour the mix into a glass and enjoy!
